Are you wanting something delicious, indulgent and chocolatey? Why not try this easy rocky road recipe! Chocolate, marshmallows and biscuits? You can’t go wrong with that!
Here I used Nigella’s Christmas book recipe!
300g milk chocolate (or dark if you prefer)
3 tbsp golden syrup
200g rich tea biscuits (or maybe some extra to dip in your tea!)
100g mini marshmallows
- Melt the butter, chocolate and golden syrup in a saucepan. Scoop out around 125ml of this and leave to one side
- Bash up the biscuits (a great stress relief) and add these to the saucepan of melted goodness! Then add you marshmallows!
- Pour the contents of the saucepan into a brownie tray and then add the 125ml mixture you set aside earlier on top! Maybe sprinkle a few extra marshmallows on top!
- Place in the fridge for 2 hours to set and then cut into pieces
Waiting the 2 hours for the mixture to set is hard but definitely worth it!!! You can always eat the leftover contents in the saucepan in the meantime whilst you wait for it to set!
If you want to make them look extra special why not dust the top of them with icing sugar!
