Peanut Brittle!

This sweet treat really is delicious! It’s sugary, yet you get the saltiness of the peanuts. And it’s crunchy, but the odd spot is squishy and soft! Plus it’s super quick to make! I followed the recipe from Nigella’s Christmas cook book!



200g caster sugar
60ml water
150g golden syrup
150g salted peanuts
1 and a 1/2 teaspoons vanilla extract
25g soft butter
1 and a 1/4 teaspoons bicarbonate of soda



  1. Line a baking tray with tin foil and butter the foil
  2. Put the syrup, sugar and water in a pan and gently bring to the boil; once boiling, stir and boil for a further 10 minutes – careful not to burn it!
  3. Take the pan off the heat, add the vanilla, butter, nuts and soda and pour out onto the tray
  4. Leave to cool completely! Then break it up and enjoy!
